Cookie Dough balls

Made out of roasted chickpeas!! You don't even need to roast them if you're out of time or like raw cuisine, but it just adds an extra earthy sweet touch. This is an indulgence with lots of nutrients, I love making these when prepping for a hike or a long day out and about. They're also quick and easy and I have a hunch you have all these ingredients sitting in your cupboards at home...


==>Yields 12 balls


3 cups (400 grams) of cooked chickpeas, rinsed and drained

4 tablespoons of good quality honey or maple syrup

4 tablespoons of almond butter

2 teaspoons vanilla ( depending on what you have: liquid essence or grains, add until the taste is to your liking)

Pinch of salt

1 1/2 cups chocolate chips 


To make the balls

  1. Roast the chickpeas for 15 min on parchment paper at 160 degrees C or just skip this...Combine the chickpeas, honey, sugar, soda, almond butter, vanilla, and a pinch of salt in a food processor and process until smooth.

  1. Remove to a bowl and stir in half a cup of the chocolate chips. Form into 1-inch balls and place on a parchment-paper lined baking sheet. Freeze until solid.


To add an extra killer effect

  1. Melt remaining cup of chocolate chips. Dip the balls into the chocolate until covered, then place back on parchment-paper lined baking sheet. Freeze until chocolate has hardened
  2. then store at room temperature until you want to eat them.


Stays good for 4 days! (and yeah I added some sesame seeds, because why not?)
